An exceptional dinner orchestrated by Chef Henrik Fredskov
The gala dinner of the European Hotel Awards 2024 designed by Chef Henrik Fredskov offered a rare gastronomic experience. The meal began with grilled Unima Label Rouge Madagascar shrimp, accompanied by daikon, grilled coconut, yuzu-ponzu, ginger, cashew nuts, and shiso. Then, a Wagyu Miyabi, with chimichurri and shiitake-eggplant purée, followed by a grilled black angus fillet on the Josper of Grandiose Gastronomy, served with miso sweet potato purée and grilled bimi with truffled teriyaki sauce. The tables were adorned with Griottines© in translucent red boxes, adding refinement and sophistication.
The dessert consisted of a Suspiro caramel cream, accompanied by mango-passion fruit sorbet, and salted almond crisps. The meal was paired with fine wines, including La Scola White Wine, Plaza del Sol Red Wine by David Moreno, EPC champagne, and Bottega Gold Prosecco, as well as Healsi water personalized with the European Hotel Awards 2024 logo.
